Development of Antiviral Mucoadhesive Oral Film with Catechins Extracted from Matcha Green Tea

The general aim of this project is to develop an innovative product with mucoadhesive oral film dosage technology as a preventive and treatment supportive product thanks to the immune system supportive and antiviral effect of catechin, a bioactive natural compound obtained as a result of extraction and purification processes using different solvents from Matcha green tea, which is one of the resources of our country.

The product obtained is both antioxidant-rich and antiviral. It has a wide range of uses in the field of functional food and supplementary food, and a high value-added product has been obtained that can be used by patients with swallowing difficulties, bedridden patients and all people with weak immune systems.

Selective Encapsulation of Volatile Compounds of Spruce Resin

The aim of this project is to develop new techniques that will enable the extraction of spruce resin (labdanum), which is a very valuable product for the chemical, cosmetic and food industries of the hairy spruce plant known as Cistus creticus, and the isolation and purification of bioactive volatile components in high efficiency, and the stabilization of the purified high added-value volatile compounds in order to ensure their use as chemical raw materials with increased stability.

In this method (electro spray technology) in which simultaneous selective purification of labdanum essential oil compounds and stabilization with cyclodextrin inclusion complexes are carried out in the presence of varying electric field, complex compounds are formed by selectively placing various compounds in the cavities of cyclodextrin molecules.

Selective Encapsulation of Volatile Compounds of Spruce Resin

Use of Eggshell Membrane as a Functional Raw Material and Bioadsorbent for Purification of Natural Compounds

This project introduces an innovative approach to food industry waste by separating eggshell membranes using a novel foam separation technique. During this process, the membranes are enriched with natural compounds featuring high antioxidant and antimicrobial properties. By upcycling olive leaves—a common agricultural byproduct—and waste from pasteurized liquid egg production, we have successfully developed high-value-added products. The resulting food supplement combines high-polyphenol olive leaf extract with eggshell membrane, creating an economically viable and sustainable solution.
